Brexit hasn't happened yet and that's pretty much due to remainers fighting democracy tooth and nail to prevent it. I'm including May and most of her government in that. Can't help but think you mean everyone who doesn't want a hard Brexit is a remainer. It isn't remainers fighting either, it's leavers unable to agree. They have a mandate after all.

from what I can see the choice isn't between hard brexit and soft brexit, soft brexit requires agreement with EU which they seem to be unwilling to do, maybe if the EU really thought UK would hard brexit they would be softer

If 'they' are the EU 27, that's wrong. The Withdrawal Agreement has been concluded between the EU 27 and the UK. The next step is negotiating a trade deal and agreements on other issues. Obviously, we can't get to this stage until the UK actually loses its membership of the EU. It's impossible to for the EU to negotiate such agreements with itself, as would be the case while the UK is still a member state.
If the UK simply loses its membership on the 31 October, the negotiations start from zero. If the Withdrawal Agreement is finally ratified by the UK Parliament, negotiations begin on a solid basis, of agreement already reached and the agenda for negotiation set out in the Political Declaration, which is attached to the Withdrawal Agreement.
The other possibility is to simply cancel Brexit. This is politically dangerous. MPs would lose face and lose votes. So, they'll probably want to hold a second referendum to make sure they have public approval for Remain.
