Chorizo is great, of course. Proper Spanish chorizo is relatively hard to come by here. Most chorizo is Mexican which is more like a spiced minced pork rather than a heavy paprika hard sausage. I've taken to cooking bacon in the oven. In America all bacon is streaky, and streaky bacon should be crispy crunchy so laying it out on a baking sheet and cooking it until almost all the fat is rendered out, then draining it on kitchen paper, works really well. Also, all the fat is rendered out so it's *cough* healthy, too. I have recently been told about cooking bacon in water first, then pouring it of and frying as usual. It goes nice and crispy. It works, but I don't know why. Again, probably healthier.

I used to boil sausages first then fry em, it gets the fat out and makes em more tender, I was skeptical at first but it worked well.
